How to Clean and Prepare Fish Before Cooking

Introduction

Preparing fish properly before cooking helps maintain its quality, flavour and texture. Whether you are preparing whole fish, fish slices or boneless fillets, following the right steps makes the process easier.

1. Choose Fresh Fish

Start with fresh, good-quality fish. Look for a mild, clean smell, firm flesh and a fresh appearance. Buy seafood from a trusted supplier that handles and stores it properly.

2. Keep Fish Chilled

Keep fish refrigerated until you are ready to prepare it. Avoid leaving raw fish at room temperature for extended periods.

3. Clean the Fish

If the fish has not already been cleaned, remove the scales using a fish scaler or the back of a knife, working carefully. Open the belly if needed and remove the internal organs. Remove the gills when preparing whole fish.

If your fish is already cleaned by your seafood supplier, you can skip these steps.

4. Rinse and Dry

If rinsing is necessary, use clean running water and avoid splashing water around the kitchen. Pat the fish dry with disposable paper towels. Clean and sanitise the sink and surrounding surfaces afterwards.

5. Choose the Right Cutting Style

Different recipes require different cuts. Common fish preparation options include:

  • Whole: Fish kept whole.
  • Gutted: Internal organs removed.
  • Headless: Head removed.
  • Slices: Fish cut into pieces or steaks.
  • Boneless: Bones removed for easier eating.

Choose the cutting style according to your recipe and preference.

6. Prevent Cross-Contamination

Use a separate cutting board and utensils for raw seafood. Wash your hands with soap after handling raw fish. Keep raw seafood away from cooked food and ready-to-eat ingredients.

7. Cook Thoroughly

Cook fish until it reaches an internal temperature of 63°C (145°F), or until the flesh is opaque and separates easily with a fork. Cooking time depends on the thickness and type of fish.
